Watermelon feta salad

Serves: 4-6 | Prep Time: 10 minutes | Cook Time: 0 minutes

Ingredients:

  • 4-6 cups seedless watermelon, cut into 1-inch cubes
  • 2-3 tbsp fresh mint leaves (about 1 small handful), stacked, rolled, and thinly sliced
  • 1 lime, juiced
  • ½ cup feta cheese, crumbled, about 2-3 ounces 
  • 2-3 tbsp balsamic glaze
  • Flaky salt

Instructions:

  1. Begin by cutting ripe seedless watermelon into 1-inch cubes. Place in a large serving bowl.
  2. Next, stack fresh mint leaves on top of each other, roll them right, and thinly slice crosswise to get thin ribbons of mint. Set aside.
  3. Squeeze over the juice of a lime, followed by crumbled feta cheese, then the fresh mint, and drizzle with balsamic glaze. Top with flaky sea salt and serve. 

Notes and variations:

  • Keep in the fridge until ready to serve.
  • Can be made ahead of time.
  • If you don’t care for mint or can’t find it, try fresh basil instead.
  • Feel free to add other in-season fruits, such as fresh strawberries or cherries. This recipe also works well with diced cucumber and thinly sliced red onion.
