3 overnight oat recipes for on-the-go mornings

When school is back in session, it inevitably adds to the chaos of getting out the door on time. Having breakfast prepped ahead of time will save you time and hopefully some sanity. Overnight oats are a classic choice to prep ahead. 

If you want to set up your mornings for success, look to these three overnight oat recipes to get you started. I’ve crafted three single-serve overnight oats recipes so you can prep just one on the fly or scale up and make a batch for the entire week. They can even be made in individual containers or mason jars for easy grabbing. If you’re looking for more fruit-forward flavors, try the Blueberry Banana or Coconut Mango, and if you’re a chocolate lover, you will love the Tiramisu. Blueberry Banana Overnight Oats

Serves: 1 | Prep Time: 10 minutes | Soak overnight

Ingredients:

  • ½ cup milk
  • ¼ cup Greek yogurt
  • 1 tbsp. honey or maple syrup
  • 1 tbsp. chia seeds
  • ¼ tsp. vanilla extract
  • ½ cup rolled oats
  • Pinch of salt
  • Dash of ground cinnamon
  • ¼ -⅓ cup blueberries (fresh or frozen)
  • ½ banana, sliced

Directions:

  1. In a mixing bowl or container of choice, mix milk, Greek yogurt, honey, chia seeds, and vanilla extract until thoroughly combined and honey has dissolved. 
  2. Add the oats, pinch of salt, cinnamon, and mix. Carefully add fresh or frozen blueberries (if using frozen, you do not need to thaw them) and top with sliced banana. 
  3. Cover and refrigerate overnight. 

Tiramisu Overnight Oats

Serves: 1 | Prep Time: 10 minutes | Soak overnight

Ingredients:

  • ½ cup milk
  • ¼ cup Greek yogurt
  • 1 tbsp. honey or maple syrup
  • 1 tsp. instant coffee or ½ tsp. instant espresso
  • 1 tbsp. chia seeds
  • ¼ tsp. vanilla extract
  • ½ cup rolled oats
  • Pinch of salt
  • 2 tbsp. chocolate chips
  • 1-2 tsp. cocoa powder

Directions:

  1. In a mixing bowl or container of your choice, mix milk, Greek yogurt, honey, instant coffee/espresso, chia seeds, and vanilla extract until thoroughly combined, ensuring the instant coffee and honey have dissolved. 
  2. Add the oats, pinch of salt, and chocolate chips, and then mix.
  3. Cover and refrigerate overnight. Dust with cocoa powder and dig in.

Coconut Mango Overnight Oats

Serves: 1 | Prep Time: 10 minutes | Soak overnight

Ingredients:

  • ½ cup coconut milk
  • ¼ cup Greek yogurt or coconut yogurt
  • 1 tbsp. honey or maple syrup
  • 1 tbsp. chia seeds
  • 1-2 tbsp. unsweetened shredded coconut
  • ¼ tsp. vanilla extract
  • ½ cup rolled oats
  • Pinch of salt
  • ¼ -⅓ cup diced mango 

Directions:

  1. In a mixing bowl or container of choice, mix milk, Greek yogurt or coconut yogurt, honey, chia seeds, shredded coconut, and vanilla extract until thoroughly combined and the honey has dissolved. 
  2. Add the oats, a pinch of salt, and cinnamon, then mix. Carefully add fresh or frozen blueberries (if using frozen, you do not need to thaw them) and top with sliced banana. 
  3. Cover and refrigerate overnight.
