Winter Citrus Salad

Believe it or not, citrus season is in the winter. It may be cold outside, but that doesn’t mean you should pass up the season’s harvest and miss out on the beautiful fruit winter has to offer. To take advantage of citrus season, I highly recommend this Winter Citrus Salad. Bursting with varieties of oranges, ruby grapefruit, pops of pomegranate seeds, zesty arugula, ripe avocado, creamy burrata, it is finished with tangy balsamic glaze and fresh basil. This salad is fresh, bright, balanced, and absolutely stunning!

Winter Citrus Salad

Serves: 4  | Prep Time: 10 minutes  |  Cook Time: 0

Ingredients

  • 5 oz. baby arugula
  • 3 oranges (any variety – navel, Cara Cara, blood orange), sliced
  • 1 large ruby grapefruit, segmented
  • 1 ripe avocado
  • 4 oz. burrata torn
  • 1/2 cup pomegranate arils
  • Basil, thinly sliced
  • Balsamic glaze for drizzling

Directions

  1. Begin by prepping the citrus. Cut the ends off the oranges, then cut off the rind and pith, working all the way around. Then slice into rounds.
  2. For the grapefruit, cut off the ends and cut around the fruit, removing the rind and pith. Then carefully separate the grapefruit segments and set them aside.
  3. Cut the avocado in half, and slice.
  4. On a large serving platter, add the baby arugula. Top with the orange slices, then the grapefruit segments, and finally the avocado slices.
  5. Carefully tear a ball of burrata and scatter it over the top.
  6. Drizzle balsamic glaze over the salad, then sprinkle over the pomegranate seeds and finish with fresh basil.
  7. Serve immediately.

Notes:

Dairy free? Substitute the burrata with more avocado.

If you can’t find burrata, fresh mozzarella works well.
