Healthier Caesar salad dressing
Serves: 10-12 (2 tbsp servings) | Prep: 5 mins | Cook: 0 mins
Ingredients:
- 1 cup Greek yogurt
- 2-4 garlic cloves, finely minced
- Juice of half a lemon
- 1-2 tbsp Dijon mustard
- 2 tsps Worcestershire sauce
- 1-2 tsps red wine vinegar
- ½ tsp fish sauce or 1 tsp anchovy paste (optional, but highly recommended for umami)
- Salt and freshly cracked black pepper, to taste
- ¼ tsp onion powder
- ½ cup freshly grated Parmigiano Reggiano
Instructions:
- Add all the ingredients to a bowl with a whisk or spoon and mix thoroughly until combined. Alternatively, add everything into a blender or food processor and blend until smooth and emulsified.
